The bowl will absorb most of the oil, leaving it concentrated around the bowl. Leave the bowl in place and serve from the sides. This way, the oil won’t end up on your plate, and your dish will be perfectly oil-free and delicious. For future reference, try pre-cooking your vegetables without water in a pressure cooker or by blanching them in water. This will help prevent them from absorbing too much oil when you sauté them with spices.
